CCE London had Unox, Marco Santinello, Sales Manager, and Jake Hewison, Active Marketing Chef down to do a demonstration on the ChefTop MIND.Maps Compact Plus and the Bakerlux SpeedPro at the office.

Marco explained the whole philosophy of Unox, and how they have been making the cooking process simple and easy for the end-user. The beauty of the machines is that there is consistency in cooking and that you can either use the pre-set programs or input your own. This is something that is conducted throughout all the products that Unox sells.

Marco, who is not a trained chef, showed us how the MIND.Map worked, or in fact, he asked one of us to do the cooking! We were being shown how to cook salmon, burgers, grill bacon, fry eggs, and sweet potato fries, and steam carrots and spinach. So up steps Holly, who was cooking a salmon fillet and a beef burger. Holly was shown how the programming worked on the control panel, whereby she just needed to press the correct combination of ingredients to get the perfect result. The control panel is placed on the door because it means that is less likely to be damaged by heat or steam from the oven and surrounding equipment. With the salmon, she needed to insert a probe to ensure that it reached the correct temperature. After this, the burgers were then placed in the oven, and again Holly programmed the oven accordingly based on the thickness of the burgers. The oven, with its technology, produced the best time and heat for the products to be cooked.

We were shown how simple this was, and by doing it ourselves we agree it was quite idiot-proof and showed that even with non-trained staff you can still get the consistency of cooking, as well as tasting great!

This technology on the ovens is perfect for chains, whereby if you had twenty locations, cooking the same product, the program can be sent to all machines wirelessly ensuring the consistency and uniformity of the product across the various locations.

The control panel on the oven doors not only counts down the cooking time but also has a traffic light system so you can see visually when it is ready and due to come out.

We were shown and advised what the benefits of the different trays that were available for the machines and how they were used in the ovens. These must be purchased separately as they are accessories to the machines.

The oven was run through the paces, and we were shown how easy it was, from the oven telling us when to put in the bacon, eggs, and fries and when to take them out so that they were ready together. The programming was extremely easy to set up.

The programming of the machine was extremely simple, but you can manually override this when needed, or if you wanted to have control of the cooking. Quite simply you get the best of both worlds!

Following the end of the cooking, we were shown how easy it was to clean the oven. The detergent for the machines is placed within the bottom panel and it is a simple push and turn system, meaning that you can load the machine without handling the harsh products. There are a number of different cleaning options, but the wash system covers the whole of the machine as well as the hard-to-reach areas, such as behind the fans. The quick wash is 14 minutes long, and at the end of the day/service, you can program the oven to wash and be ready for you to use in the morning.

During the cooking demonstration on the MIND.Map, Jake also highlighted the Bakerlux SpeedPro for the cooking of the rolls and finishing the products once put together. Again, the ease of equipment usage is key to us. The rolls were finished in time, and once the burgers and bacon were cooked, Jake built a burger which was then finished in the SpeedPro.

This is the first-ever backing speed oven, a convection oven, and a speed oven all in one, so small footprint to maximise potential profit.

It is recommended that you use the connectivity of the machines to the full advantage. You can monitor the performance of the machines, view consumption, usage reports and keep track of your KPIs.

The machines come with a 4-year warranty, 1 year on labour, and four on parts, however, you need to ensure that you register the oven with the manufacturer and that you are using the correct UNOX detergents and water filtration units for the machine.

The morning with Unox was extremely useful, the products brought in were easy to use and the question-and-answer session ensured that everyone knew what the pros and cons of the equipment were.
